Saturday Photos

Here are some photos from the past Saturday from my friend Earl's camera!
Me in Subee on the way to the market on Saturday:
Where we met my Ant, Uncle, Annie Rose, and their new German exchange. This perfect shot was snapped:
Highlights were buying a watermelon, picking out yummy Manitoba pasta to take up North,
and buying our weekly bouquets:
Next up was a trip to Shelmardines, it was rainy and cold and there was hardly anyone there. I love Shelmardines (even though it is more expensive than T&T, right Brendini?) it is still so fun to go there and look at everything. I found a new apron:
And we also got some fall mums, if you have never gotten them get some this year. They are perfect for the fall doorstep and last forever!
I will definitely miss Saturday morning errands...

Sunday

Now I am officially down to counting 'lasts'. Yesterday was the last Sunday. It involved lots of eating (2 breakfasts and a brunch), some shopping, some resting, and a copious amount of muesli making!
My Mama will eat this everyday for breakfast....hopefully it'll last her a couple of months!

6 days to go...

I'm going to miss going to the Fyxx and seeing Stacey...and her putting a straw in my milk without me asking!

Summer Salad Rolls

When I was in Vancouver in February I ate so many of these, they were the perfect quick lunch and they kinda made me forget it was still winter and back in Charlottetown it was freezing cold! I made them for the first time this summer and I was so pleased with them, perfect snack, side dish, or lunch!

Makes 8 rolls
1 1/2 oz cellophane noodles (also called 'bean thread' noodles)
1/2 teaspoon sesame oil
1/2 cucumber, peeled and cut into very thin strips
1 carrot, peeled and cut into very thin strips
1/2 red bell pepper, cut into very thin strips
1 green onion, chopped
1/2 tablespoon rice vinegar
1/2 teaspoon sugar
1 teaspoon fish sauce
Juice of half a lime
salt and pepper
2 tablespoons cilantro leaves, chopped
16 fresh mint leaves
8 rice paper wrappers, can be found at Superstore in the Ethnic Cuisine section
Cook noodles according to package directions. If your noodles don't have directions or they are in another language, a good method is to bring a pot of water to a boil, turn of the heat, and add the noodles, let them sit for about 10 minutes and then drain. Toss drained noodles with sesame oil.
Combine all the vegetables, green onion and cilantro in a large bowl. Whisk together rice vinegar, sugar, fish sauce, lime juice, and some salt and pepper. Pour over vegetables and toss to coat. Taste it, if it doesn't taste good now it's not going taste good when you're done. Add salt if it's needed or any of the other marinade ingredients.
Fill a round cake pan or pie plate halfway with hot water. For each wrapper, immerse it in the hot water until it softens, about 30 seconds. Lay it on your work surface and fill it with 1-2 tablespoons of noodles. Then add 1/8 of the veggie mixture. Add 2-3 mint leaves. Roll it up like a burrito! Might take a couple of trys to get a 'nice' roll, keep at it, experiment with putting veggies on first, or placing ingredients in different areas or the rice paper (middle, front). Eat immediately or store in the fridge, covered, for at most 2 days.

Very important notes:
1. Originally this recipe came with a dipping sauce, the first time I made it I was taking them 'togo' and didn't want to have to deal with spilling sauce, so I just doubled the vegetable marinade so they veggies were extra juicy and even poured a bit on the noodles. They were juicy and flavourful enough to not need a sauce.
2. If you want a sauce you can use and Asian dipping sauce, either store bought or homemade. A peanut sauce, sweet chili sauce, etc.
3. I have made both vegetarian and non salad rolls, just omit the fish oil and add in soy sauce.
4. I used small-ish rice paper rounds that were perfect for appetizers. Experiment with what works best for you.
4. Lastly, to make this more filling I added strips of tofu that I tossed with the vegetable marinade and seasoned. You could also use cooked chicken or shrimp.

7 days to go...

I am going to miss BOON BURGER...but most of all I'm going to miss the people I go to Boon Burger with!

11 days to go...

I leave so soon...I am at once so excited and so sad to say goodbye. I will miss lots of things about being home in Winnipeg...like reenacting sculptures at Assiniboine Park with Si:
Just an FYI posts in the next week may be short, I'll try and post as often as I can in all the busy-ness!

Pan Fried Devilled Eggs

You now know about my love for devilled eggs and how I'm trying to bring them back! Who says they're just for church picnics and small town baby showers! They are so simple to make, yummy, and well, isn't that all that matters?
You can stick anything in devilled egg filling! Let's brainstorm...
- pickles
- lobster meat
- fresh herbs
- curry
- bacon bits
- avocado
- chipotle peppers
Oh man, so fun!
Tonight I took devilled eggs a step further and pan fried them so they were crispy and warm...ahhh, so good!!
Here is a basic recipe I start with and then embellish.

Serves 4
8 large eggs, hard boiled and peeled (best way to boil these is my Granny's method, bring the eggs and water to a boil, shut off heat, and cover and let sit 12 minutes, works every time!)
1 teaspoon dijon mustard
1 garlic clove, minced
2 tablespoons parsley, minced
2 tablespoons milk
1 tablespoon mayo
salt and pepper

Cut eggs in half and remove yolks to a bowl. Add the remaining ingredients to yolks and crush with a fork to a smooth paste. Taste it!! Does it taste good? If not add some salt or pepper. Taste, taste, taste!
Pack the filling back into the eggs. If you want to eat them old school then mound the filling in and EAT. If you want to try something new, pack the filling in but only so it's even with the surface of the egg. Heat a pan up with a splash of oil and place the filled eggs stuffed side down. Let them fry for about 3 to 5 minutes until they are golden brown. Remove and devour!

Tired but happy!

I had a half great day today. The morning sucked ______ (fill in the blank, I won't say what I usually say because that's inappropriate, contrary to popular belief, I have a foul mouth. Si say's its because I listen to country music...but I'm fairly certain it was a Tracy influence!) and it's only bright spot was hanging with Si and listening to a hunky-dory podcast. I won't say what the awful event was but it involved costco and full carts. Bah!
The day got lots better when I met up with Brenda and Isabelle and we had lunch at Boon Burger (if you haven't been, GO, I frequent the joint so much its borderline embarrassing). We then went shopping and had yummy iced tea from David's Tea in Polo(io) Park (go there too). And I'm having a fantastic evening at home, eating burritos and watching The Office. Isn't it funny how just the right people can turn a day completely around. Thanks to all who did that for me today...I definitely needed it!
I'm off to the market tomorrow for some yummy vegetables, cross your fingers for a perfect August recipe!
Let's end today with a picture that makes me smile, my two favorite boys having fun...ridiculous!

Gimli!

In the past few days I have realized that I am leaving in 2 weeks to go up North...whoa! That definitely crept up on me. I am trying to stay calm, pack up, as well as squish in a whole bunch of visiting and fun times...which is why on Wednesday me and my friend Earl (you might remember her from this post last year) headed out to Gimli for a few hours! I hadn't been there for years and it was so fun to just shop around, eat a yummy lunch, and visit the beach.
We ate at Amma's Tea House....both dainty and delicious!

Sweet 16, poker, and root beer jello shots....

Yesterday Nate celebrated her 16th birthday...one month early so we could cook the food together. So fun! We made chipotle devilled eggs (I'm trying to bring them back into style), summer rolls, phyllo mushroom bundles, cream puffs with raspberry pastry cream, and root beer jello shots. Wowza!
I don't think I've EVER made jello...or I have but I've totally blocked it out. I had the pleasure of making lime jello yesterday.
And then mixed root beer schnapps into it and put it in plastic shot glasses!
Summer rolls were also a ton of fun!
Fresh ingredients totally make the dish!
And dessert...CREAM PUFFS! And pink to boot!
I left my camera for Nate to use during the party...this was my favorite picture:
Every 16 year old girl's dream...a root beer keg!

Potato and Green Bean Salad

This was a salad I picked up at the beginning of summer last year and seemed to make almost once a week for two months, it was my go to salad. I haven't made it as many times this summer but whenever I have green beans and new potatoes in the fridge I usually make this recipe or a simpler variation.

Serves 6
1/2 cup olive oil
3 tablespoons white wine vinegar
1 1/2 tablespoons dijon mustard
1/4 cup red onion, minced
8 ounces green beans, ends trimmed and cut into 1 1/2 inch pieces
2 pounds new potatoes, scrubbed and cut into medium sized chunks
1/4 cup fresh dill, chopped
Salt and Pepper

Whisk vinegar, mustard, onion, and a nice pinch of salt and pepper together in a large bowl. Whisk in olive oil. Reserve 1/4 cup vinaigrette in a measuring cup.
Bring a medium sized pot of water to a boil, add 2 tablespoons of salt. Cook green beans in water until tender-crisp (keep trying them as the cook till their just the right texture) about 3 minutes. Drain in colander and rinse under cold water till cool. Combine with reserved 1/4 cup of dressing. Set aside.
Meanwhile place cubed potatoes in a large pot and cover to an inch with cold water. Salt heavily and bring to a simmer. Simmer to just done, 7 to 10 minutes. Drain and immediately transfer to the large bowl with the vinaigrette. Gently toss.
Let potatoes cool a bit before adding in the marinating green beans and dill. Season and serve.

*The quickie version of this is cooked potatoes and green beans tossed with olive oil and dill. Easy pie!

Folklarama - Spanish Pavilion

I have been going to Folklarama for the past few years, ever since the cousin Nate started Spanish dancing. I only go to one pavilion, eventually I will work up to going to more, in the past years I would go to the Spanish one 3 or 4 times in a week! Every year I see the dancer's get a little older, a lot better, and the show comes together even more. This year was by far the best, and I would highly recommend to any of you who don't have a plan for tonight to check it out!
The food is good...
The company is great...
And the dancing is AMAZING!
Here is the one good picture I took of Nate....the best, most beautiful, and most smiley dancer!
Go! You won't be disappointed! There are 3 showings tonight, 6:45 pm/8:15 pm/9:45 pm, and its located at the Portuguese Centre (1080 Wall Street *sargent @ wall*).

Market Lunch

One of my favorite emails I have received lately was one from Zach and Stacey...it was photos of their lunch on Saturday after we had all gone to the market. What awesome family that I have, people that spend their time making and eating beautiful, fresh food!

Shawarma Time

Shawarma Time (616 Ellice *the corner of ellice and maryland) is the place to go when you're looking for mouth tingling Lebanese food. Oh, it is so delicious. I went for the classic Chicken Shawarma and was so pleased.
This is my my-mouth-is-so-nice-and-warm-and-my-hair-is-wind-blown-from-the-industrial-sized-fan look:
When you eat anything from Shawarma Time you need lots and lots of napkins...here's Nate hiding in our shawarma wreckage!
I did have a picture of Stacey enjoying Shawarma Time...but I think she may have gotten a hold of my camera and deleted it...hmmmmm. We all had a great time and you would too! So go! You won't be disappointed!

Camping in Spruce Woods

On Monday I headed for Macgregor where I picked up my bestest friend since I was 1 year old and she was born, Zoe! We packed up....we were only gone for 2 nights but by the looks of Subee we could have be gone for weeks.
It was gorgeous there....have I mentioned how much I love Manitoba? It is so beautiful in the south west...
It was sweltering on Monday and after we'd set up the tent we headed straight for the beach. We spent most of the afternoon/evening there.
On Tuesday we went for a drive and saw even more MB beauty...here we are, sticky and bug bitten.
In the afternoon we went for a covered wagon ride in the dunes. Not only because it was sweltering out but because we LOVE wagon rides!
We almost didn't get on the ride, 15 seniors had booked the wagon for the afternoon, but luckily we squeezed on and enjoyed the banter of small town 80 year old's out for the afternoon!
We were able to see the sand dunes and the Devil's Punch Bowl.

The Devil's Punch Bowl was so striking, especially with the looming storm clouds.
After a total of about 15 minutes of being back at the campsite it proceeded to downpour. Buckets or rain for 4 hours! Our tarp was leaky but we managed to keep moral up with a hot meal and a warm shower.
This morning we packed up and did one of the shorter hikes and saw yet another amazing view!
Despite the heat and the rain, we had a great time!

Kawaii Crepes

After much persisting on Si's part we finally went to Kawaii Crepes (201-99 Osborne Street). And not only was I impressed but I went back a second time in the same week! The idea of a huge crepe, all crispy and warm, being filled with anything your heart desires, minus having to do the dishes, is so perfect to me.
I know Si enjoyed it....

Crepes in cute paper cones! Eek!
And it's air conditioned! Perfect place on +30 days! Try it!

Pickerel Burgers

We seem to have a steady supply of MB pickerel stored in the freezer and this recipe is possibly one of my favorite ways to eat. I recently thawed all the pickerel and made 1 1/2 dozen burgers and popped them back in the freezer for a quick dinner some night. I have eaten these burgers with and without a bun and I actually prefer it without. If you must you could eat them with ketchup but I think that they taste perfect with a slather of mayo. Condiments are up to you!

Serves 6
1 1/2 lbs pickerel fillets
1/3 cup flour
2 eggs, beaten
2 green onions, chopped
1 tablespoon capers, chopped
1 tablespoon lemon juice
salt and pepper
1/4 cup cornmeal
3 tablespoons olive oil

Preheat oven to 350F. Place pickerel on sheet pan and sprinkle with salt and pepper. Bake 15 minutes. Let cool.
Flake fish into a bowl and mix in flour, egg, green onions, capers, and lemon juice. Form into 6 patties. Refrigerate for 10 to 15 minutes to firm up.
Place cornmeal in a shallow bowl and coat both sides of the burgers in it. Place a large frying pan and oil over medium heat. When it's hot add in the burgers. Cook till golden brown on both sides. Serve

Gone

My Grandparents have gone on a road trip....
They took my Mom with them...
Zach has left too, traveling the opposite direction...
I've been hanging out with this guy lately...
I seem to always be the one leaving. It's not so fun being the one left behind! Although Si and I (and Stacey) do know how to have a good time!

Ricotta Stuffed Tomatoes

This is the perfect time to make this recipe....tomatoes, corn, zucchini....all ready right now! Either wait for the farmer's market on Saturday or head out to St. Leon Gardens or Cramptons (or if you're lucky to your own backyard) and pick up some fresh and local ingredients to make this recipe.

Serves 4
4 large tomatoes
1 egg
1/2 cup ricotta cheese
2 tablespoons red onion, finely chopped
2 tablespoon basil, chopped
2 tablespoons parmesan cheese
1 garlic clove, minced
1/2 cup corn kernels
1/2 cup zucchini, diced
Salt and Pepper

Preheat oven to 350F. Slice tops off tomatoes, and scoop out pulp of centers to make stuffable tomato shells; set aside. Discard half of the tomato pulp; remove seeds from and finely chop remaining half of pulp.
Whisk together egg and ricotta in medium bowl until smooth. Stir in red onion, basil, parmesan, and garlic. Add corn, zucchini, chopped tomato pulp; stir until combined. Season with salt and pepper.
Fill tomatoes just to top with 1/2 cup ricotta mixture, top with tomato top. Place in large baking dish.
Bake 45 minutes, or until filling is puffed up and tops are browned. Let stand 10 minutes before serving.
Note: If some of the ricotta mixture leaks out while cooking scrap it up off the pan and serve alongside the tomatoes. Zach likened it to Alfredo Sauce!

Welcome!

I had been talking about doing something new with the ChefGirlRP Cooks blog and I have! This is definitely something new! A new address, new name, and new layout. But lots is still the same, you'll still find stories of my adventures, many photos, things that are quirky to me, and recipes! I think one of the changes some of you will like the most is the addition of many more recipes, and much more frequently too!
I felt it was time to shake things up, ChefGirlRP Cooks was created in and mostly about being in Charlottetown, and since I'm no longer there it was time to change! So here it is! Check back frequently, leave comments, let me know you made it over!
